Strawberry Spinach Salad

Take lunch up a notch with this strawberry spinach salad! It is the perfect mixture of sweet and savory and you won’t regret meal prepping it for every day of the week. Though the strawberries are the all-star of this salad, the poppyseed dressing is crazy delicious and easy to make!

Candied Slivered Almonds
- ▢ 1 cup raw slivered almonds
- ▢ 1/2 tablespoon maple syrup
- ▢ pinch of salt
Strawberry Spinach Salad
- ▢ 5 oz. fresh spinach
- ▢ 1 lb. fresh strawberries , sliced
- ▢ 1/2 cup feta crumbles
- ▢ 1/4 medium red onion , sliced
Poppy Seed Dressing
- ▢ 1/4 cup olive oil
- ▢ 2 tablespoons plain , nonfat Greek yogurt
- ▢ 1/2 tablespoon lemon juice
- ▢ 1/2 tablespoon apple cider vinegar
- ▢ 2 teaspoons honey
- ▢ 2 teaspoons poppyseeds
- ▢ 1/8 teaspoon salt

Instructions
Candied Slivered Almonds
- First, spray a baking sheet with nonstick cooking spray. Then, lay slivered almonds down on the baking sheet and drizzle with maple syrup and season with a pinch of salt. Bake at 400ºF for 8 minutes.
Strawberry Spinach Salad
- Prepare the Poppyseed Dressing by following the directions HERE.
- Evenly distribute spinach, strawberry slices, feta, red onion, and almonds into four bowls or meal prep containers.
- Drizzle two tablespoons of poppyseed dressing over every bowl and enjoy!
