Viral cottage cheese desserts are here to stay, and I’m here for it! This single-serve cottage cheese brownie is rich, fudgy, and packs 28g of protein per brownie. It’s perfect for a quick, high-protein dessert that feels super indulgent.

What Makes This Recipe Great
- Single serve: Sometimes I just want a single serve dessert! Instead of making a whole batch of brownies, I love love love making this incredible single-serve brownie. If I’m baking with my kiddo, it super easy to double the batch so we can each have one ❤️.
- Protein-packed: Specifically, 28g of protein per brownie!
- So fudgy and delicious: It’s one part brownie one part lava cake, and that is just an unbeatable combination.
Key Ingredients
- Cottage cheese: My protein powerhouse strikes again! You’ll blend the cottage cheese for a super smooth texture.
- Chocolate protein powder: Make sure you’re using whey protein powder for this recipe!
- Maple syrup: Maple is my go-to natural sweetener, and it adds amazing deep, rich flavor.
- Cocoa powder: This helps make this brownie extra fudgy and chocolate-y.
- Egg white: The egg white is crucial because it adds protein without adding density from the egg yolk. I’ve tested this with just an egg white and with a full egg, and the yolk made the brownie too dense.
